The Boann Distillery is a family owned state-of -the-art distillery in the heart of the Boyne Valley.
Opening in 2018, the €20m Drogheda based facility will include a whiskey distillery ,craft brewery and taproom , an architecturally designed visitor centre which will host distillery and brewery tours, a 120 seat restaurant, whiskey bar and a gift shop.
With plans to produce craft whiskey, gin and an innovative range of craft beers for the domestic and export market, craft beer production is already underway in the 50,000sq ft building located in the lush Boyne Valley countryside.
All Ingredients are 100% natural , 100% Irish . The barley comes from Irish Farmers and local Meath and Cooley barley will feature. Boyne Valley Spring Water is drawn from deep below the Distillery .
The handmade bespoke traditional copper pot stills have patented inbuilt nanotechnology that exposes the spirit to 6 times more copper surface during the distillation process than in a purely traditional still . By combining technology with tradition the plan is to produce a spirit of exceptional quality and purity .
Maturation will be on site in the Boann aging cellar using predominantly Bourbon and Sherry casks . There are plans to experiment with a number of different wine and spirit cask finishes .
From milling through to maturation – all parts of the whiskey making process will be crafted within the Boann Distillery . Bottling is in house , controlling the whole process from grain to Glass , ensuring the production of a whiskey of great character with a unique provenance and a real sense of place.
The internationally renowned master distiller, John McDougall , is consultant Distiller to the project and brings a vast amount of knowledge and craft.
Pat Cooney, his wife Marie and four of their children are all actively involved in running the business.
The location of the Boann Distillery,in heart of the Boyne Valley, a region steeped in history and mythology , is part of Irelands Anchient East tourist trail in Ireland , and incorporates famous sites including Newgrange (older than the pyramids ) and Tara ( seat of the High Kings of Ireland) .
It will hold a unique proposition by being one of the only combined Distillery and Brewery in Ireland .
Drogheda was once home to eighteen local distilleries, which slowly declined to just one by 1822. This last distillery was owned by James Woolsey, later taken over by the Preston Brothers, it quickly grew to become one of Ireland’s principal Irish whiskey producers. However taxes, civil war and Prohibition took their toll and in 1968 the distillery closed and the last barrels of whiskey left Drogheda— a rich piece of local heritage was lost forever.
Today a revival has begun and Irish whiskey is now quickly becoming the fastest growing spirit in the world. In early 2018, spirit will flow from the Boann Distillery copper pot stills, the first to flow in Drogheda in nearly 50 years.
